【レシピ】家庭の魚料理を“お店の味”に！鰆の菜の花あんかけ
鰆をあんかけにした、上品な一品。苦みのある菜の花が毒素排出を促し、ゆず、大葉のさわやかな香りがイライラを予防します。見た目も美しく、まるでお店の味に！
- 鰆…4切れ
- 酒…大さじ1
- 醤油…大さじ1
- サラダ油…少々
- 新玉ねぎ…1個
- 水…大さじ1
- 塩…少々
- ゆず…適量
- 菜の花…1/3束
- 大葉…10枚
- 出汁…300cc
- みりん…大さじ1と1/2
- 醤油…大さじ1と1/2
- 水溶き片栗粉…
〈菜の花あん〉
片栗粉大さじ1と1/2に、
大さじ3の水を加えて溶いておく
- 鰆は酒と醤油を振って2〜3分ほどおく。キッチンペーパーで魚の水気をふき取り、サラダ油を熱したフライパンに入れ、蓋をして両面を蒸し焼きにする
- 新玉ねぎは8ミリ幅のにして、耐熱皿にのせ、水と塩を振りかけてふんわりとラップをかけ、電子レンジ（600W）で3分〜3分30秒加熱する
〈新玉ねぎの輪切り〉
新玉ねぎを横にし、繊維を断つように切る - 菜の花あんを作る。菜の花はさっと茹でて水にとり、水気を絞って1センチ幅に切る。大葉はみじん切りにする。鍋に出汁、みりん、醤油を入れてひと煮立ちさせ、水溶き片栗粉を入れる。とろみがついたら菜の花と大葉を加えて好みの味に調える
- 器に2の新玉ねぎを盛りつけ、鰆をのせて周りに3をかける。千切りにしたゆずをのせる
